We went out to Porter today to buy fresh peaches. We bought 1/2 bushel of Red Haven and 1/2 bushel of Bellaire, which is my favorite peach. For those of you not around farm country, that's a LOT of peaches. It cost $50 for the whole bushel, but we'll freeze what we don't use now and we'll have peaches all year. Mom and I ate two on the way home and they tasted like concentrated summer. We also got a quart of blackberries just because and they look beautiful though I haven't eaten any yet.

I peel and slice peaches, then just put 4 cups of cut-up fruit in a quart freezer baggie, zip-lock it (squeezing the air all out) and lay it down flat in the freezer. The sliced peaches turn into a slab of peaches that is fairly easy to break, in case you only need to use part of a package. I froze peaches that way last year and they kept just great and have tasted good in fruit salads and cobblers all year long. I don't put sugar in mine-- but if you do, they'll freeze even better. Whenever I find good strawberries, I freeze them exactly the same way.
