So, I've never cooked scallops before. In fact I've maybe *eaten* scallops twice in my life. Last night I wished to broaden my horizons and venture into scallop cooking, but I couldn't find a recipe I was happy with so I had to make up my own. I sauteed the scallops and some crumbled bacon in butter and a lemony seafood seasoning, then added a little white wine and chicken broth to the pan and simmered it a few minutes. Then I transferred the scallops and wine sauce to a small baking dish, sprinkled parmesan over the top and broiled the whole thing til the parmesan was slightly brown and the exposed bits of bacon were crispy. It turned out really tasty and was very easy.

So the weekend looks busy, as usual. Davey's birthday is tomorrow and there are festivities related to this over the weekend including making the cake and wrapping presents and such, plus the kids have a big CampFire event tomorrow, I have fun but time-consuming stuff of my own I'm committed to and I may have to put in a little work on my caseload too.

I'll be seeing some of you this weekend, yay! The day really just can't go fast enough today. Work has been challenging the last couple of weeks as we cover for a co-worker who's off, and as busy as the weekend is it's a walk in the park compared to answering my phone at work today is likely to be. :-)
